Mini Triple Chocolate Cheesecakes

  • 2 (8 oz.) pkgs. Cream cheese
  • 2/3 cups sugar
  • 1 Tbsp. flour
  • 2 eggs
  • 2 Tbsp. Kahlua
  • 1 cup mini chocolate chips
  • 12 Oreos (divide into two wafers with icing discarded.)
  • Preheat oven to 325 degrees.
  • Beat cream cheese, sugar, and flour. Add eggs, one at a time, mixing well after each. Blend in Kahlua. Melt ½ cup chocolate chips and add to cream cheese mixture until blended. Stir in remaining ½ cup chocolate chips.
  • Spray muffin pans with cooking spray or line with paper liner if desired. Place a chocolate wafer in the bottom of each. Top with a heaping tablespoon of filling. Bake at 325 for 20 minutes. Chill. Garnish with chocolate ganache (recipe below). Makes 24.


Chocolate Ganache

  • 3/4 cup whipping cream
  • 6 oz. high quality bittersweet chocolate (chopped or use chips)
  • 1 Tbsp. sugar
  • Stir cream, 6 oz. chocolate, and sugar in heavy medium saucepan over low heat until smooth. Cool slightly. Pour over center of each cheesecake and spread gently over the top. Chill until topping is set
